Abstract. This article presents the results of a study of limiting and internal normal stresses depending on the moisture content and temperature of fruits (apricots and plums), vegetables (potatoes and carrots) during convective drying. In mathematical modeling: quantitative description of bond energy, determination of reaction kinetic constant, synthetic equation Euler method, modified Nelder-Mead method and Vakhuska-Voboril model and topochemical Erofeev equation for optimization of selected models were performed.
